How to prepare Afia Efere (a.k.a white soup)



 Afia Efere is one of the best and a typical calabar delicacy. This delicacy had been the best and unbeatable ever enjoyed.
I could remember vividly in those days while growing up as a child, My mum and I went to the market to purchase our Christmas wares and little did we know that the resources would be diverted for Afia Efere a.k.a Our white soup.

Afia Efere as stated earlier had been the best soup ever tasted as I will like to share with you how its being prepared.


How to cook Afia Efere soup and Recipe.

HOW TO PREPARE AFIA EFERE SOUP.
(INGREDIENTS/RECIPE FOR PREPARING AFIA EFERE A.K.A CALABAR SOUP).

1. TWO K.G OF FRESH GOAT MEAT.
2. Medium size of okra and it must be slide.
3. One tuber of yam and two to three smoked fish.
4. Two cups of chicken brouth.
5. ONE teaspoon ground black pepper and one UYAYAK pod.


6. Three pieces of local nutmeg.
7. Three chicken stock cubes (as this will make it taste good).
8. A little salt.

THE KITCHEN SECTION.

Now that you are in the kitchen, peel your yam and cut it into smaller pieces. 
Allow it to boil till it gets soft.
while the yam is still on heat or fire, wash the meat or beef, cut into smaller sizes to your taste, add seasoning like nutmeg, pepper and salt and allow it to get boil for about twenty five to thirty minutes.

Process of cooking AFIA EFERE.

Notes: You may use more than one cooking stove or gas for cooking to aid the cooking.


Chop onions, grind the cray fish and nutmeg in dry mill. Wash the UYAYAK and keep aside for use.
cut the PERIWINKLES and wash severally with water till it gets cleans.

Remove the bone from the dry fish, Chop the UZIZA leave and keep aside for use.
Having done all these, The yam would have been well cooked and soft. Pound the yam till it gets smooth and mould it in a plate or cooler.

Note: Reserve small portion of the yam to thicken the soup.



Few tips to help your food to look more enjoyable.

1. Pounded yam or fufu is the best bolus to consume as this would keep you strong and much more
healthy all day a.k.a six-to-six.

AFIA EFERE soup and fufu.

Pounded yam is the main thickener however, achi could be used.
Aviod the use of palm oil and vegetable oil as this will change the taste of the meal.
ADD little vegetables in your cookings.

Finally, stock fish would be more appreciated than crayfish in preparation of AFIA EFERE a.k.a White soup.
